Simple Split Pea Soup

Ingredients
- 2 cups dried green split peas
- Water, as needed (for soaking)
- 6 cups vegetable broth
- 2 medium potatoes, peeled and diced
- 2 large carrots, chopped
- 3 stalks celery, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon thyme
- 1 bay leaf
- 1 teaspoon salt
Instructions
- Prep the split peas: Rinse the dried green split peas thoroughly, then soak overnight in enough water to cover by at least an inch. Once soaked, drain well.
- Combine in the slow cooker: Add the soaked split peas to a 4-quart slow cooker along with the vegetable broth, diced potatoes, carrots, celery, garlic, cumin, thyme, bay leaf, and salt. Stir together.
- Slow cook: Cover and cook on low for 6 to 8 hours, until the split peas break down and the vegetables are tender.
- Blend until smooth: Let cool slightly and remove the bay leaf. Blend the soup until smooth using an immersion blender directly in the pot, or in batches in a blender.
- Serve: Ladle into bowls and serve warm with a drizzle of olive oil.
