Celery Root Soup

A cozy, comforting classic to warm you up

If you're searching for a comforting, flavorful soup that warms the soul on a chilly evening, this Celery Root Soup is your perfect match. Made with the earthy and versatile celery root (celeriac), this soup is a creamy, slightly sweet twist on traditional root vegetable soups, finished with crispy green apple crisps for a delicate crunch.

🕑 Prep 15 min🔥 Cook 6-8 hrs (slow cooker)⏳ Total 8 hrs🍽 Serves 6⭐ Easy

Ingredients

  • 2 tablespoons butter or vegan margarine
  • 1 small leek (white and light green parts only), chopped
  • 2 cloves garlic, minced
  • 1 large celery root, peeled and cubed
  • 2 medium russet potatoes, peeled and cubed
  • 6 cups vegetable broth
  • 1 1/2 teaspoons salt
  • 1 teaspoon pepper

Instructions

  1. In a large saute pan over medium heat, melt the butter or margarine, then add the chopped leek. Saute for 4 minutes until tender and translucent. Add the minced garlic and saute for 30 seconds.
  2. Transfer the leek and garlic into a 4-quart slow cooker. Add the cubed celery root and potatoes. Pour in the vegetable broth, season with salt and pepper, and cover. Cook on low for 6 to 8 hours.
  3. Once cooked, let the soup cool slightly. Blend with an immersion blender or regular blender until smooth and creamy.
  4. Serve in bowls, garnished with crispy green apple crisps for a sweet, crunchy contrast.

Helpful Tips

  • Saute the leeks and garlic until caramelized to deepen the flavor.
  • Apple crisps add crunch, but roasted nuts or fresh herbs work well too.
  • Use a rich homemade vegetable broth for maximum taste.
