Cinnamon Lentil Soup

This cinnamon lentil soup takes the classic lentil soup a step further by layering in aromatic spices like cinnamon, cumin, and allspice. Ingredients
- 7 cups hot water
- 1 1/2 cups dried brown lentils
- 3 cups chopped onions
- 2 teaspoons instant beef bouillon
- 1 1/2 teaspoons ground cumin
- 3/4 teaspoon sugar
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon allspice
- 1/4 teaspoon ground red pepper (optional, for heat)
Instructions
- Cook the lentils: Place a large pot over medium heat and pour in the hot water. Bring to a rolling boil, then add the dried brown lentils. Return to a boil, reduce heat, and simmer for about 12 minutes.
- Saute the onions: While the lentils simmer, heat a large lightly greased skillet over medium heat. Add the chopped onions and saute for about 9 minutes, stirring occasionally, until soft, translucent, and lightly golden.
- Mix the spices: In a small bowl, combine the beef bouillon, cumin, sugar, salt, cinnamon, allspice, and ground red pepper if using.
- Combine and simmer: Add the sauteed onions and spice mixture to the pot of lentils. Stir well, cover, and simmer gently for another 25 minutes until the flavors meld.
- Serve and enjoy: Ladle the soup into bowls and serve hot. The texture should be thick but spoonable.
