  • 1 teaspoon sugar
  • 1/4 cup all-purpose flour
  • 8 cups beef broth
  • 1/4 cup dry white wine (optional)
  • 1 bay leaf
  • Salt and black pepper to taste
  • 4 slices French baguette or crusty bread
  • 1 cup grated Gruyere or Swiss cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh thyme or parsley for garnish (optional)

Instructions

  1. Caramelize the onions: In a large heavy pot, melt the butter with olive oil over medium heat. Add the sliced onions and cook slowly, stirring occasionally, for 30 to 40 minutes until deeply golden and sweet.
  2. Build the flavor: Sprinkle the sugar over the onions and stir for about 1 minute. Add the flour and cook for 2 to 3 minutes, stirring constantly.
  3. Deglaze the pot: Pour in the white wine if using. Scrape the bottom to release the caramelized bits and let simmer until reduced by half, about 2 to 3 minutes.
