Ingredients

  • 1 1/2 pounds firm white fish fillets (cod, haddock, or pollock), cut into bite-sized pieces
  • 4 slices bacon, chopped
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups peeled and diced potatoes
  • 2 cups fish or seafood stock
  • 1 cup whole milk
  • 1 cup heavy cream
  • 1 bay leaf
  • 1/2 teaspoon dried thyme
  • Salt and black pepper, to taste
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. In a large heavy pot or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove with a slotted spoon, leaving the bacon fat in the pot.
  2. Add the finely chopped onion. Saute for 3 to 5 minutes until translucent and lightly caramelized.
  3. Stir in the minced garlic and cook for 1 minute until fragrant.
  4. Add the diced potatoes and mix well with the onions and garlic.
  5. Pour in the fish or seafood stock, making sure the potatoes are covered. Simmer for 10 to 15 minutes until potatoes are tender.
  6. Add the bay leaf and dried thyme. Stir gently to combine.
  7. Carefully add the fish pieces, being cautious not to break them. Simmer for 5 to 7 minutes until the fish flakes easily.
  8. Stir in the milk and heavy cream. Heat gently until the chowder simmers.
  9. Season with salt and black pepper to taste.
  10. Remove the bay leaf. Serve hot, garnished with fresh parsley and the reserved crispy bacon.

Helpful Tips

  • Use fresh, firm white fish for the best texture.
  • Don't overcook the fish; it should be tender and flake easily.
  • For smoky depth, use a combination of bacon and a splash of smoked paprika.
